    After using this pan for about a year, my satisfaction with this purchase continues to grow. It is the best pan we own. It looks great (a beautiful orange color), and cooks great. The most surprising feature: It is very easy to clean. Nothing seems to stick to it!

    Wow! I just had to make two back-to-back dishes of my Crepes Ensenada and needed to hurry doing it. So I made one full dish, cooled it, took it out, and without cleaning it first (I never would do that with any other dish!), baked another full dish. Yes, I had to use a scraper on it after it soaked, but it came out clean, without too much time spent doing it too. No scratches and lovely crepes to boot. The only thing about this dish is that, because of its size, one has to be very careful washing/rinsing it, so it is not banged in the sink. If banged, like glass, it may crack at a future date.

    The color is a bit darker than the picture of the red Cherise and the yellow Citron dishes. Of course, when one is viewing colors on a computer, the type of graphics card and its settings can cause variations on the color we see vs. the color that the host site is actually displaying.

    I purchased this item after a long search for a large, deep lasagna pan. I did not want another nonstick baking pan, nor did I want a Pyrex glass pan that I worry will explode on me at any time. I wanted heft and depth mostly because my lasagna almost always seems to spill over while cooking (I know, I like it thick and saucy). I was amazed at how hard it was to find exactly what I was looking for until I stumbled upon Emile Henry. I watched a video about their production of the Burgundy clay bakeware and was sold. As soon as the pan arrived, I cleaned it and made not lasagna but Chicken Florentine (it was on the menu for that night’s dinner already)! It cooked perfectly, I was able to cut through the cheese in the pan without worry of damaging the surface and the cheese slid off like a dream. I could not believe how easily the food came out of the pan with no sticking. I just knew that washing it out would be a problem as I have previously had to soak my lasagna pans overnight at times but cleaning was a breeze. I was able to easily wash off the sauce and baked on cheese. I cannot wait to try baking lasagna in it (that’s on the menu for tonight) and see how it holds up!
