    I have been baking bread using a pizza stone, broiler pan filled with water, a peel, and assorted pans. This cloche does away with most of these. I proof the bread on the base with the cover on (using parchment paper under the dough) and heat up the oven. Once the oven temperature has stabilized (I use 470 degrees) I cut the dough and pop the cloche into the oven–usually for 40-45 minutes. Then I take off the cover and let the bread brown for 5-7 more minutes. No water in the pan and no misting. It couldn’t be easier. The cloche is not heavy and is very easy to clean–often I just brush off the crumbs. You are limited to breads that fit the base but I have baked boulles, sandwich rolls, and small baguettes without difficulty. Larger baguettes and similar long breads will need a stone. I recommend the cloche highly. I also own an Emile Henry STEWPOT and I have used it to bake bread as well. Nicely designed and well made products that are not too heavy and clean up easily. What more do you want?

    Our red cloche is beautifully crafted and looks great on the countertop. It also makes bread that is just as crisp & yummy as the rave reviews promise. We particularly appreciate the handles on the sides of the base and the large knob on the top of the dome that make this cloche easy to grasp and maneuver about with heavily padded oven mitts in the close confines of a very hot oven . This feature distinguishes the Emile Henry cloche from several others that are less costly… but it is a crucial safety feature in my opinion. True this item is a tad pricey… but this high quality bakeware is sure to yield wonderful returns over the years.

    Previously I was using the Emile Henry Dutch Oven for baking bread. That worked well, but I much prefer using the Bread Cloche. It is lighter and easier to use because the top comes off leaving just a plate for the bread. The cloche holds in the moisture during baking and then I like to take off the top and leave the bread on the bottom plate for another 5-10 minutes to create a crispier crust. So beautiful, so light, and so easy to use.
