There is nothing better than coming home to the smell of dinner cooking and knowing that it is ready when you walk in the door. This is an excellent and easy to prepare pot roast recipe for cooking in a crock pot. If you prefer to cook the roast in the oven the directions are enclosed for that as well. The recipe feeds a family of four with enough for lunch the next day left over.
Ingredients are beef roast that is about three to five pounds in weight. It can be which ever kind your family prefers such as chuck, rump or English. Seven medium size potatoes, nine or ten carrots, approximately four stalks of celery, french onion soup mix-one package, one teaspoon of corn starch or flour and half of a cup of warm water.
Peel and wash potatoes then cut into pieces about the size you would cut for making mashed potatoes. Peel and wash carrots then slice the carrot, with each piece being about 1/4 inch thick. Wash and cut celery the same thickness as the carrots. Mix the vegetables together in a bowl.
Spoon about one quarter of the mixed vegetables into the bottom of crock pot then lay roast on top of vegetables. Poke several holes on the top and side of the roast with a fork to allow for juices to get inside the roast. Put the rest of the vegetables over the roast.
In a bowl mix the soup mix, flour or corn starch and the water. Stir well until the majority of the flour or corn starch no longer is clumped. Pour the liquid over the roast and vegetables. Hint-The ingredients uses soup mix for the onion, however, if your family is onion eaters feel free to add a small cut up onion to the vegetables.
If you will be cooking the roast while away from the kitchen, set the temperature to low and let cook for approximately eight hours. If want it done quicker, set the temperature to high and cook for approximately six hours. If you prefer the meat to be medium well, cook for approximately four hours in the crock pot on high temperature.
When you are ready to serve dinner, turn off and unplug the crock pot. Transfer the roast to a meat plate and let sit for a few minutes before slicing. Stir the vegetables before transferring to a serving dish. This is the simplest but most delicious pot roast recipe. The meat is very tender and flavorful. To cook the dinner in the over, follow directions except place them into an oven proof pan, cover with aluminum foil and bake at 350 degrees for six hours. Add a big green salad and some warm buttered bread and this will be a meal the family will expect weekly.
