Southern Sweet Potato Pie Ingredients
3 Sweet Potatoes, baked and skinned (useful hint below), 1 1/2 Tablespoons unsalted butter, melted, 2 Tablespoons pure maple syrup, 1/4 Cup dark brown sugar, packed, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, two eggs, 6 Tablespoons heavy cream, 1/4 Cup pecans for garnish, 1 9? prepared pie pastry (I cheat and use store bought pre-made pie shells!)
1. Prepare pastry in pie plate. Refrigerate until necessary. 2. Preheat oven to 350F. 3 In large mixing bowl, mash sweet potatoes. For a smoother filling, you could also run through a food processor, blender or food mill. 4. Add butter, syrup and sugar and continue mashing until smooth. 5. Whisk in cinnamon, nutmeg and eggs. 6. Cautiously fold in cream. 7. Pour mixture into pie shell and garnish with pecans. 8. Bake for approximately 25 minutes or until the edges start to rise up. The center will appear not quite set.
Garnish with whipped cream or vanilla ice cream.
