If you still use Teflon pans but are concerned about their potential health risk (http://www.webmd.com/food-recipes/nervous-about-nonstick), I highly recommend this one!
Compared to this one, DeBuyer Mineral B Element Country Cheff 9.4″ (http://smile.amazon.com/dp/B00462QP2K) is an elephant (in both positive and negative sense). The French pan looks beautiful. Pure iron and extremely thick construction with high wall (3+”). This may last even after the human race extincts. But this thing is dang heavy. A little lighter than my lodge 10″ cast iron pan on scale, but I don’t feel much difference. This one is also harder to season as I mentioned. I had to redo several times, yet the wall around the handle rivets is still half-done. Also, this expensive & beautiful pan doesn’t look that beautiful anymore after completely seasoned.
Bottom line: This is the best option if you just want a beautiful pan for display. If you have to lift this pan often, you will need a lot of muscle on your forearms.
Lodge factory-reasoned 12″ pan (http://smile.amazon.com/dp/B005U93RYW) is lighter & cheaper than DeBuyer but heavier and more expensive than World Cuisine. Nevertheless, this one may not be a good choice for a regular kitchen. Lodge steel pans come in factory seasoning, which is rough & matte. While this tough looking pan would be perfect for a camping trip or a back-yard cookout, this pan looks rather ugly compared to the other two that will have slick glossy black surface. I’m also worried if the factory seasoned surface is any safer than Teflon non-stick surface because there was no info about the seasoning material I could find.
