Wusthof 4455 10-Inch Sharpening Steel, Ceramic

When that time comes that you need to touch up the sharp edge of your Wusthof knife the 10″ ceramic steel is a good option. The Wusthof 10 inch Ceramic steel can align your knife edge and unlike traditional steels, the Ceramic Steel also contains fine abrasives that will sharpen your knife as well as re-aligning the blade. Used like a traditional honing steel the ceramic is very fine and and can bring up a very fine edge.While most sharpening rods are only useful for realigning knife edges, those made of diamond dust or ceramic–as this rod is made of–actually do sharpen dull knives. An additional benefit to this sharpener’s ceramic shaft is that it never wears down as diamond coating eventually does. Simply hold the steel out in front of you and, with light pressure, draw the blade across the ceramic shaft from heel to tip at a 20-degree angle. Your blade should quickly be restored to its original sharpness. The sharpening steel offers medium to fine abrasion on knives and has a wide bolster to protect hands during the sharpening process.   1. Sharpens Knives Well I have a few very good knives, that I keep up after every use. This sharpening rod, has kept my knives razor sharp. I was even able to revive a good knife that I had let go too long.Pro’s:Very easy to sharpen my knives, and keep them sharp.Cons:1. Metal tends to wear off of the knife and onto the ceramic, making the ceramic less coaese, and therefore not able to sharpen anymore.
