What I really liked; perfect large size (12″), March 5, 2015

What I really liked; perfect large size (12″), super comfortable handle, nice looking pan, very strong value. Here’s the but; after one use/test on very low heat the bottom warped very noticeably. Either the edges pulled up 1/16″ all around or the middle of the pan pushed down but after one very gentle use, sweating some onions, the pan spun like a top on the counter top and was even unstable on our gas burner grates (Bluestar). The pan was washed only after it had completely cooled down so that could not have contributed to the warping. My feeling is that the large pans are more prone to warping but this was unacceptable. After my experience I then checked the Internet and found other folks with the identical issue and even some compelling videos of pans that spin like tops. On our gas range-top the pan might have still been serviceable but I worried that the warping was very likely to get even more pronounced over time, making the pan useless–and we already own a wok.

I did call Cuisinart Customer service. I wanted to know if I exchanged the pan was the new one likely to warp but their completely robotic and unhelpful representative was unable to help at all. Truly disgraceful customer service. After that call I gave up, returned the pan, and ordered a dramatically more expensive All-Clad copper core 12″ saute pan and hope that their design, quality control, and customer service are at a much higher level.

I wanted to like this pan but I suspect the warping issue is a design flaw and not just a case of me buying a defective example of this product. Your results may differ but I’d recommend avoiding this particular pan, especially if you have a smooth/glass cook-top. I also add that other products in this line may be problem free, or even fabulous, but this large saute pan did not deliver.

I previously bought a Cuisinart French Classic 12″ frypan and found it to be very high quality and wanted a saute pan as well. Unfortunately, the French Classic saute pan, although 5 1/2 quarts, is deeper and smaller in diameter than the Multiclad Pro version and I really needed the larger cooking surface. The Multiclad Pro is definitely a good looking pan, very solid, a good weight and has a cover with a perfect fit. My first use was sweating about 3 pounds of sliced onions over medium heat and it did the job perfectly – no hot spots at all for very even cooking over the entire surface; exactly what I was looking for and a huge improvement over what I had been using before ( one of those stainless steel pans with a thick disc on the bottom to even out the heat). After I was done, I checked the flatness of the pan on my granite countertop and found that it had indeed warped, as other reviewers have noted. Although disappointing, this was not a deal killer for me as I cook on a gas range and the small but noticeable amount of warping doesn’t really have much effect on its cooking utility for me. For those who cook on an electric flat top range, however, this should definitely be a deal killer ( and probably for an induction range as well). Even a small space between part of the bottom of the pan and the cooking surface will hugely reduce the heat transfer from the range to the pan, not to mention the pan spinning on the flat surface. I should note that this warping has not happened on the French Classic pan I had previously purchased ( made in France, not China). I can also note that the French Classic line has a different, and better, handle. A final plus for me, though, is that the cover that comes with the Multicad Pro saute pan perfectly fits the French Classic frypan, which does not come with a cover at all.
