Strange Use/ Great Pan,
I really like this casserole dish. It is the same as having artwork in my kitchen. Besides that it, works like a charm. So far I have cooked several things in it.
I started off with a cake which sounds like a really funny thing to cook in a casserole dish. BUT, I was going to an early morning breakfast and I was supposed to provided the bread items. I have a loaf dish and I cooked a regular loaf of bread in that, but I was determined to try a new cake recipe that I had. It sounded so much like a good breakfast bread that I decided to give it a try. I was going to double the recipe because there were to be 25 people attending, so I need a big pan. And, I was running a little behind, so I needed a pan that would cook quickly and evenly, and I was pretty sure this pan would fit the bill.
The cake, just to give you insight into how precise this little cooking manuever had to be, was a pumpkin cake mix and I was to add canned peaches of the variety that go into pies and also to add nuts. The syrup of the peaches was what was to make the cake nice and sweet so it would be like a breakfast bread. I threw the nuts in with the same thing in mind…it would be breakfasty. But that much stuff added to my cake mix meant I had a lot to cook and I had one hour and 15 minutes to do it, plus, the real bread was already in the oven in the LeCreuset Loaf Pan and was about a third cooked. This was going to take some timing finesse.
So, the cake/bread mixture was put together and into the pan in 10 minutes. I prepped the pan with a heavy layer of butter. I raised the temp of the overn about 15 degrees and put the casserole dish in with the already cooking bread which was in a LeCreuset Loaf Pan. I fiddled around with oven temps and did a lot of hoping and praying that all would be well.
All, in all, things did very well, and I must thank the pan! In 65 Minutes the cake was done. A toothpick came out clean when poked into the cake. Even though I had played with the oven temp, the cake only took 5 minutes over the stated cooking time even though it was loaded with extra ingredients.
As Soon AS THE CAKE CAME OUT OF THE OVEN, it went in the FREEZER to cool. The directions say it can go freezer to microwave, to oven, and it does so nicely. The cake and pan ONLY got 3 minutes in the freezer, the I carefully carried the pan to my serving platter, turned it over slowly, slowly and as hoped, the cake popped out and was ready for a sprinkling to powered sugar and some peachy decorations!
What a great pan. It was in the Microwave for the melting of butter; in the oven to cook; and in the freezer to cool. Wow!!! These pans cook faster than the normal pan but cook evenly. I have certified that through the use of several of their pans while using them for conventional and unconventional uses. Even though I used a higher than called for temp, the pan did ITS JOB WELL. (The cake was a little burned right at the edges, but that is because I used too much butter to line it. A little butter, or a little Pam does better.)
The pan cleaned up beautifully. On one end of the pan,I wiped down the edges a little where I dropped cake batter and did not clean it off. I did NOT WIPE up messes off the other end. I plopped it in the dishwasher crumbs and all and let it sit for a few days. It came out of the dishwasher sparkling clean when it did get washed.. It has such a nice cooking surface that the dishwasher is actually able to get it clean. I have washed these LeCreuset items by hand and am amazed at how slick the surface is and how easy it is to clean them. The bottom is unfinished though, and it took scrubbing with cleanser to clean that, so be sure the bottom surface doesn’t have any spills on it before you pop it in the oven. I was in a hurry and the dirt on the bottom got by me.
I have also made a pot roast and another meat dish, with all the potatoes and trimmings in it. It cooks almost as fast as things in a cooking bag. I had time, so I cooked my roast at a low temp and it was so succulent, it melted in our mouths. All the veggies were done through and I did not pre-microwave them as I do with some older pans.
I was only disappointed in one thing with the pan. I dinged the cover against the side and knocked a small chip in it. I have read other reviews that discuss chipping and cracking in LeCreuset. It has finally happened to me, but this is my 10th piece of LeCreuset. I could have sent it back, but I needed it desperately for that early AM cake. Amazon STILL would have taken it back. So, I guess it is still in my cupboard because I was too darned lazy to pack it back up. Besides, by then, I had become emotionally attached to the silly little yellow thing. Just know, that chipping might occur with any LeCreuset item and you can send it back. You DON’T have to have the orginal box it it is defective. Just pop it back to them. (Over time, I have learned to use the Amazon return system, and they…
